NUTTY VANILLA ROSE GRANOLA

Let’s be honest. Have you ever bought a granola that made your taste buds go „woooow“? I haven’t. Plus they’re often loaded with saturated fat and refined sugar and that is not what I want in my breakfast bowl in the morning. Do you? 

Once you give in and make your own granola at home, you will never NEVER go back to buying a store bought granola. I promise! It’s so easy to make, you can control what goes in it, it’s much cheaper aaaand it’s super delicious! You can take the measurements of this recipe and change them up the way you like it. It’s like a basic recipe, I guess. Use your favorite nuts and seeds, change up the spices and add different dried fruits… maybe even some chocolate… mmmh chocolate granola!!

Anyway, the sky is the limit!

The flavors of this granola are rather delicate, so they go perfectly with a variety of vegan yoghurts, nut milks and fruits. The subtle taste of vanilla, rose and coconut and the light sweetness of the goji berries are perfect as a summer style granola. I love making a breakfast jar to take to work with me. I simply add the granola to a base of either coconut or soy yoghurt and a mix of my favorite berries. It’s so so good! I could literally have this breakfast every day. Since the granola ist refined sugar free and the whole batch is only sweetened with a 1|4 cup maple syrup or honey, it keeps me full and satisfied until lunch and sometimes beyond. No sugar highs here!! ! I have to admit, I sometimes have a bowl as an afternoon snack as well. It’s like a healthy addiction, right?!

So, if you have ever thought about making home made granola but you were afraid it’s too much work, please, do me a favor and give it a shot! It’s so simple and so worth it! The smell of the roasting granola fills up the entire house and the anticipation to wake up in the morning to have a bowl of the nutty, crunchy goodness…

 

WHAT YOU NEED {makes one sheet pan}

 

1|2 cup gluten free oats

1|4 cup buckwheat flakes

1|2 cup chopped almonds

1|2 cup chopped walnuts

1|2 cup chopped unsalted pistachios

1|2 cup unsweetened desiccated coconut flakes 

1|4 cup golden flax seeds

1|2 cup goji berries

1|4 cup rose petals

2 tbsp bourbon vanilla powder

2 tsp cinnamon powder

1 pinch of Himalayan pink salt {or a good quality sea salt}

1|4 cup organic coconut oil

1|4 cup organic honey or maple syrup

 

HOW TO

 

1| Preheat oven to 150°C and roughly chop all the nuts.

 

2| Combine all ingredients except for the goji berries,desiccated coconut, flax seeds and rose petals.

 

3| Line a baking sheet with parchment paper, evenly spread the mixture on it and bake for 15 minutes.

 

4| Take it out of the oven and stir it around a bit. Put it back in the oven for another 10 minutes, then add the coconut. Put it back for another 5 minutes, then add the goji berries, flax seeds and rose petals. Stir while still hot, then let it cool completely. Store the granola in a an air tight container.

 

I recommend to enjoy this granola daily with loads of fruit and vegan yoghurt!
